Recipe Quick Facts

  • Prep Time: 9 minutes

  • Cook Time: 0 minutes

  • Chill Time: 10–15 minutes

  • Yield: 16 bites

Ingredients

Dry Base

  • 1 ¾ cups Oat flour

  • ½ cup RNWY Vanilla Complete Protein

  • ¼ tsp Sea salt

Wet Base

  • 1 cup packed Medjool dates (10–12 dates, pitted)

  • ½ cup Nut butter

  • ¼ to ⅓ cup Almond milk or water

Instructions

Phase 1: Blending & Mixing

  1. Blend the wet base (2 min): Process your pitted dates, nut butter, and 3 tablespoons of almond milk/water in a food processor until it forms a thick, sticky paste. You may need an extra splash of liquid to help the dates blend smoothly.

  2. Mix the dough (2 min): Add the oat flour, protein powder, and sea salt directly into the food processor (or transfer to a mixing bowl if preferred) and pulse until a thick dough forms.

Phase 2: Chilling & Shaping

  1. Chill the dough (10-15 min): Pop the entire mixing bowl or food processor blade-free container into the fridge for about 10 to 15 minutes. Chilling firms up the healthy fats in the nut butter, making the dough drastically easier to roll without turning your palms into a sticky mess.

  2. Scoop and roll (5 min): Use a tablespoon or a small cookie scoop to portion out the dough. Roll them between your palms into bite-sized balls. Enjoy immediately or chill for a firmer texture.

Chef's Notes & Storage

💡 Technique: If your dates feel dry or firm, soak them in hot water for 5 to 10 minutes, then drain thoroughly before adding them to the food processor.

🧊 Storage: Keep these protein bites stored in an airtight container in the refrigerator for up to 2 weeks, or freeze them for up to 3 months.
