Ingredients
Dry Base
¾ cup All-purpose flour
⅓ cup RNWY Açaí Complete Protein
2 tablespoons Sugar
2 teaspoons Baking powder
¼ teaspoon Baking soda
½ teaspoon Salt
Wet Base & Fold-ins
1 cup Milk
1 large Egg
2 tablespoons Vegetable oil
¼ teaspoon Vanilla extract
As needed Vegetable oil spray
½ cup Blueberries
Instructions
Phase 1: Preparation & Batter
Preheat the surface (2 min): Preheat a griddle or large sauté pan over medium low heat to ensure an even, golden cook without burning the exterior.
Combine dry ingredients (3 min): In a medium-sized mixing bowl, thoroughly whisk together the all-purpose flour, RNWY Açaí Complete Protein, sugar, baking powder, baking soda, and salt.
Whisk wet base & merge (3 min): In a separate mixing bowl, mix the milk, egg, vegetable oil, and vanilla extract. Pour the wet mixture into the dry ingredients and stir gently until the batter is uniform and not clumpy.
Incorporate the berries (2 min): Gently fold the fresh blueberries into the pancake batter using a spatula, distributing them evenly without crushing the fruit.
Phase 2: Griddling & Serving
Portion the batter (2 min): Lightly coat your preheated griddle or pan with vegetable oil spray. Using a ¼ cup (2 oz) measuring cup, carefully scoop the batter onto the hot cooking surface.
The Golden Flip (4 min): Let the pancake cook undisturbed on the first side until the outer edges look visibly dry and any bubbles have popped in the middle of the batter.
Finish cooking (90 sec): Carefully slide a spatula underneath, flip the pancake over, and cook the second side for another 90 seconds until fully cooked through.
Plate and garnish (2 min): Transfer the hot pancakes to a warm plate and garnish beautifully with any additional toppings you would like.
Chef's Notes & Storage
💡 Technique: Avoid over-mixing the batter once the wet and dry ingredients meet. A few minor lumps are perfectly fine and help keep the pancakes tender and light.
🥞 Serving: Serve hot with an extra handful of fresh blueberries, a drizzle of pure maple syrup, or a light dusting of powdered sugar.
