RNWY Blueberry Pancakes
Fluffy, golden pancakes boosted with premium açaí protein and loaded with juicy, fresh blueberries. A vibrant and nutrient-packed twist on a classic breakfast staple.
Dry Base
- 3/4 cup All-purpose flour
- 1/3 cup RNWY Açaí Complete Protein
- 2 tbsp Sugar
- 2 tsp Baking powder
- 1/4 tsp Baking soda
- 1/2 tsp Salt
Wet Base & Fold-ins
- 1 cup Milk
- 1 large Egg
- 2 tbsp Vegetable oil
- 1/4 tsp Vanilla extract
- As needed Vegetable oil spray
- 1/2 cup Blueberries

Technique: Avoid over-mixing the batter once the wet and dry ingredients meet. A few minor lumps are perfectly fine and help keep the pancakes tender and light.
Garnish: Serve hot with an extra handful of fresh blueberries, a drizzle of pure maple syrup, or a dusting of powdered sugar.
Phase 1: Preparation & Batter
Preheat the surface
Preheat a griddle or large sauté pan over medium low heat to ensure an even, golden cook without burning the exterior.
Combine dry ingredients
In a medium-sized mixing bowl, thoroughly whisk together the all-purpose flour, RNWY Açaí Complete Protein, sugar, baking powder, baking soda, and salt.
Whisk wet base & merge
In a separate mixing bowl, mix the milk, egg, vegetable oil, and vanilla extract. Pour the wet mixture into the dry ingredients and stir gently until the batter is uniform and no large clumps remain.
Incorporate the berries
Gently fold the fresh blueberries into the pancake batter using a spatula, distributing them evenly without crushing the fruit.
Phase 2: Griddling & Serving
Portion the batter
Lightly coat your preheated griddle or pan with vegetable oil spray. Using a 1/4 cup (2 oz) measuring cup, carefully scoop the batter onto the hot cooking surface.
The Golden Flip
Let the pancake cook undisturbed on the first side until the outer edges look visibly dry and bubbles begin to pop and hold open in the middle of the batter.

Carefully slide a spatula underneath, flip the pancake over, and cook the second side for another 90 seconds until fully cooked through and springy to the touch.
